Sabrosa Vida’s Monthly Recipe

Sabrosa Vida is a free chef-led cooking and nutritional educational program funded by the Health Foundation in partnership with the El Paso Center for Diabetes.

The four-week curriculum includes lessons on nutrition education, meal preparation, and shopping skills, designed to emphasize that healthy cooking can still taste good and be fun and easy to prepare. For more information, contact El Paso Center for Diabetes at 915-532-6280.

Mixed Vegetables Salad with Agave-Lemon Lime Dressing

INGREDIENTS

¼ bunch asparagus
Juice of 1 lemon and 1 lime
¼ tsp. each salt and pepper
2 Tbsp agave or honey
1 cup olive oil
Canola oil spray
½ yellow squash or zucchini, sliced
½ red onion, sliced
3 cherry tomatoes
2 cups spring salad mix

TO PREPARE

  1. Bring 1/2 filled pot of water to a boil. Add asparagus and boil for 4-5 minutes.
  2. Put asparagus into a bowl of water with ice to cool and stop the cooking process.
  3. Add lemon/lime juice, salt and pepper, and agave in a blender or mixing bowl. Add in oil at a slow pour.
  4. Mix in a blender under smooth or mix by hand.
  5. Spray griddle/grill with canola oil. Add squash and asparagus; cook for 2-3 minutes on each side.
  6. Mix grilled vegetables with 2 tablespoons of dressing. Store the rest and use within 2-4 days.
  7. Serve grilled vegetables, onions, and tomatoes atop salad mix on ½ of a 9-inch plate.
